Today, he leads two of the most renowned fine dining destinations in the Balearic Islands: Maymanta Ibiza, awarded one Repsol Sun, and Kaypa Menorca Restaurant, where he serves as owner, executive chef and culinary director. Both concepts embody his philosophy, blending Peruvian tradition, local Mediterranean produce and a modern, global vision.
